I was looking for a double boiler over the weekend to make truffles (easy recipe see below). I realize that since the invention of the microwave, old school gadgets like the double boiler have fallen to the wayside. They are hard to find and they are expensive - $50!
So, I decided to purchase a the Martha Stewart, AKA The Queen of everything Domestic, DB.
Martha, Martha, Martha - double bubble, toil and trouble, your double boiler is NOT a good thing ( you know her famous tag line..."it's a good thing") Well, not this time.
The chocolate would not melt to a smooth, creamy dipping consistancy. It was lumpy and dried too quickly while still in the pot!
The good news, I used my old method, one small pot inside a larger pot filled with water and attached by two rubber bands - it actually works!
So here's the recipe I promised:
Easy Cream Cheesy Truffles
Ingredients:
One package of cream cheese - you can use the reduced fat Cream Cheese but if you want the OMG this is sooooo good, go for the real deal
One package of Oreos - again you can use the faux version, Twisteos but see note above.
24 Ounces of semi sweet chocolate chips
Crush the Oreos, or spin a few times in the food processor until sandy.
Mix with softened cream cheese - if your CC won't soften fast enough on the counter put it in the micro for intervals of 15 seconds at a time. Mix CC and Oreos really well.
Make large marble size balls - should make about 4-5 dozen - and place on wax paper.
Let sit for an hour in the fridge. You can also let sit over night in the refrigerator, if you want to break up the process.
When the truffle balls are cold and ready to dip:
Melt chocolate in double boiler or use the Babette Method
Drop truffle balls into the melted chocolate and turn until completely covered with chocolate. Remove and place on tray covered w/ wax paper. Let cool on counter or in the refrigerator.
Helpful Hint: use small metal tongs to turn and remove truffle balls.
